Recipe. Strawberry and Spinach Salad.

 

Strawberry and Spinach SaladOne of my favorite easy dinners this time of year is Strawberry Spinach Salad. It’s the perfect recipe to try with tots even after a long day of school when no one is up for much cooking. Like me. With minimal prep work it’s a fun group activity that gets dinner made and occupies younger sous chefs for a while.

The main rule of this salad is there are no rules.  Add what you like and leave out what you don’t.  To change it up we like to add grilled chicken breast, homemade croutons and onion slices.

Instructions
  1. Put spinach, sliced strawberries and almonds in a large salad bowl and toss. Add goat cheese and toss gently again. Pour aged balsamic over salad and toss gently until salad is coated with vinegar.

Farm Tots Weekend.

Pancakes and Strawberries

It’s been hot here in California this week and it got so nice yesterday we all took a quick icy dip in our pool for the first swimming day of the season. It didn’t last long, and now there are more storms headed our way. We are going to try to get out in between rain downpours this weekend to pick strawberries! Two of our favorite local organic strawberry farms opened this week and we have been waiting to get some of the juicy local berries for ourselves! I’m so ready to make strawberry jam and syrup. Two of my favorites! We got our outside furniture all set up last weekend so I even got to have breakfast out by the pool this morning. Pictured here. At least I got out while I could! We have been trying to soak up the gorgeous weather we have been having this week by getting outside, going for hikes and playing tourist at some local farms. More rain is on the way this weekend so we are going to get out while we can and celebrate the start of little league and get some spring cleaning out of the way before break next week.

Farm Tots Weekend.

El Nino has definitely come to visit our part of California this month. After a balmy February we have been getting daily drenchings of much needed rain. Our weekend plans got cancelled because of the incoming storm so we are getting some inside projects done instead like getting our spring plants for our garden and starting some summer seeds in our kitchen window.

For anyone that was planning on attending the Farm Fresh to you Capay Farm Tour this weekend like we were. It is cancelled. Another event is scheduled for next month.
